How to Cook a Scotch Egg?
Cooking a Scotch egg involves several steps, from boiling eggs to wrapping them in sausage meat, and finally deep-frying to achieve a crispy exterior. Here’s a summarised guide on how to cook a Scotch egg, inspired by Jamie Oliver’s recipe:
- Boil Eggs: Start by boiling eggs to your preferred level of doneness. For a slightly runny center, boil them for about 3-4 minutes. Once boiled, transfer them to a bowl of cold water to stop the cooking process. When cooled, carefully peel the eggs.
- Prepare Sausage Meat: Squeeze the sausage meat out of its skins into a bowl. Add finely chopped herbs (such as chives and flat-leaf parsley), a good grating of nutmeg, some English mustard, and season with salt and pepper. Mix well and divide the mixture into 8 equal portions, forming them into balls.
- Wrap Eggs with Sausage Meat: Flatten a ball of the sausage mixture into an oval shape. Roll a peeled egg in flour, then place it in the middle of the flattened sausage meat. Gently wrap the meat around the egg, ensuring it’s fully covered and sealed.
- Breading: Set up three plates – one with flour, one with beaten eggs, and the last one with breadcrumbs. Roll the meat-wrapped egg in flour, dip it into the beaten egg, and then coat it with breadcrumbs. For a thicker crust, you can double dip in egg and breadcrumbs.
- Deep-Fry: Heat vegetable oil in a deep pan or fryer to about 150ºC (300ºF). Carefully lower the Scotch eggs into the hot oil and cook for around 4 minutes, or until they are golden and crispy, turning them occasionally for even cooking.
- Serving: Once cooked, remove the Scotch eggs from the oil and drain on kitchen paper. If you’re concerned about the sausage meat being fully cooked, you can finish them in a hot oven for a few minutes. Serve the Scotch eggs slightly cooled with a side of Scottish Cheddar, pickles, and pickled onions for a traditional snack experience.
This method balances a crispy exterior with flavorful, moist sausage meat, encasing a perfectly cooked egg. Adjust cooking times based on your preference for the egg’s doneness and whether you’re using a deep fryer or a conventional oven for finishing.
