What is Scotch Fillet?
Scotch Fillet, known in the United States as Ribeye, is a premium cut of beef taken from the rib section of the cow, specifically from the rib primal part that spans from ribs six through twelve. This cut is highly prized for its rich marbling of fat, which contributes to its pronounced flavor and tenderness. Unlike the rib steak, which includes the bone, the Scotch Fillet is usually boneless, although bone-in versions are also popular and may be referred to as rib steaks.
The marbling within the Scotch Fillet melts during cooking, infusing the meat with flavor and ensuring a moist, tender texture. This makes the cut particularly suited for grilling, pan-frying, or roasting, allowing the fat to render and the steak to develop a delicious crust while maintaining a juicy interior.
Scotch Fillet is often served in steakhouses and is renowned for its depth of flavor and buttery texture, making it one of the most sought-after steaks for both chefs and steak enthusiasts alike. Its versatility in cooking methods and ability to remain tender and flavorful under various degrees of doneness contribute to its popularity.
